La Compagnie Bretonne's sardines, Sardina Pilchardus Walbaum, are caught between June and November, during the peak season, for a fat content that guarantees tender flesh full of flavor. We favor sardines from our Breton coasts which are fished using the Bolinche method. This method of fishing is more respectful of the fish and preserves the quality of its flesh. Our teams are present at the landings to select the best fish. We take care to be transparent by indicating on the back of each box, the port of disembarkation, the year of the campaign and the name of the boat.
