Scomber scombrus caught between October and March, during peak season, our mackerel are cooked in court-bouillon, filleted with scissors then fitted by hand. A beautiful marriage between the fruity notes of grapes and the slight acidity of mustard and vinegar, a sauce which goes well with the tender and melting flesh of the mackerel.

Scomber scombrus mackerel fillets 57% (caught in the North East Atlantic), water, mustard* with grape must: 25% of the sauce (grape must, mustard seeds, water, vinegar, salt, spices, coloring: anthocyanins, sugar, preservative: sodium bisulfite), white wine vinegar*, rapeseed oil, crème fraîche, thickeners: processed starch (corn) and xanthan gum, salt, pepper.
