The clam (Venus verrucosa) is a shellfish of very high taste quality found along the Breton coast.
Tasting
Before tasting clams, it's important to wash them well. To help open this delicacy, let them drain in salt water. The clams will open up and you can then slide your knife through the opening to the joint (back). Push the shells apart and pull on both sides to separate them. Finally, you can peel the flesh from the shells.
Firm and very tasty, clams can be eaten raw with a piece of salted butter bread, or with a few drops of lemon or cider vinegar. With its compact, flavorful flesh, it's also delicious stuffed, or baked with garlic butter.
