Description

The sardine (Sardina pilchardus ) is a small fish in the herring family. About twenty centimetres long, they are silvery in colour with bluish highlights. The sardine lives off the coast in compact shoals.

Tasting

As well as being rich in omega-3 fatty acids and vitamins, sardines are delicious. They are generally grilled on the barbecue with fine herbs. Sardines are also divine in fish soup, stuffed or cooked en papillote.

Il n'y a rien de meilleur que des sardines très fraîches et qui ne rendent pas d'eau à la cuisson, tant elles ont peu longtemps séjourné sous la glace.
